Just wondering if I need to declare this to the tax man and also what would you say? I'm self employed, or employed because adult work technically pays us the money into our banks? What name would you give this job?
Any advice would be appreciated.

You're self-employed and of course you need to declare taxes. If Adultwork was your employer, they would pay take out tax and then pay you.
Make sure you register within (3 months?) of becoming self employed otherwise you can face penalties.

For the job title it doesnt have to be exact, it can be very broad like "Media designer" etc.
You have to declare tax but dont worry you may not need to pay any, you have a personal allowance you can earn each year before tax needs to be paid.

Lots of girls put themselves down as "entertainer" or "model" or even "therapist". It doesn't really matter so long as it kind of covers what you do. You can put "prostitute" or "escort" but I'm not sure that many do. The tax man doesn't care particularly... it's only really relevant so that they can see that the things you are claiming and the money you are declaring is broadly in line with what they would expect to see from someone in that field, I think.
Give Friendly Accountant a call. He's a good guy by all accounts... for an accountant! There's no accounting for taste

Oh do register, its well worth as to what you can put through the business, get a business bank account with an iban number so you can have your credits you earn through aw in to acc
inland rev code is adult entertainment, best be honest as if you put 'hairdresser' say and the tax man finds out you can be fined

would just like to say, with advice from the tax man if dont put down what you do you can be fined - so saying hairdresser and you do webcam and they find out you can have a heavy fine and they will look into your earnings even more - honesty is the policy

I just put Dominatrix on mine. Makes declaring my business spends more transparent. Little point in saying I'm a hairdresser and filing receipts for bondage this and insertible dick shaped that :p
